With an undocked fill and stroke dialog, clicking on the main window title bar will shift focus back to that window without losing the selected object. At least it works for me in Linux. HTH

Yes, you're right. I got so used to working with a certain set of preferences it carried over into my assumptions of document properties. Sorry for the misinformation.

Then perhaps you missed that I mentioned...
But don’t forget to "Save As" a different name when you do your first "save as" as work progresses because if you don't, you'll lose the defaults you created.

Tool settings are not stored in the SVG file used as template, they are saved in the preferences file . You'll probably be directed to save a default templates folder so each time you open Inkscape you'll get the same preferences. Since you're exporting as a page and all your drawing elements are within the page, it's not necessary to group the drawing. Try this, don't group the paths/objects and see if it helps make a difference. You could also export with the "Drawing tab" highlighted, which will include everythin...

You can't change the height of a path (line) as it's controlled by the stroke width. Stroke width is what you want to change if you want a thicker or thinner path.

With the text cursor in your text, open the Text and Font dialog. Set your font size and line spacing, then click > Set as Default < first, then click > Apply.
Works for me, I’m on Linux too. The settings stay and carry over each time I start a new sessions of Inkscape.

You could simply duplicate the letter, remove the fill, add a stroke, and use Dynamic Offset or Outset on the stroke.

Is the image changing in any other way except the 1 degree increment? Rotating the .png after the export with a third party software, ImageMagick comes to mind, is the way I'd try it.

The open source application that's equivalent to Photoshop is the Gimp. You'd be hard pressed to do that image in Inkscape anywhere near the time it would take a good Gimp guy to do it in the Gimp. Not saying you couldn't do it in Inkscape but I'd think it would be a long process.
