I want to make the words "alimentos frescos" to follow the curve of the darkest black line (outside of center red banner). Every time I select the red banner, then hold down the shift and click on the words "alimentos frescos" and then do Text > Put on Path it sends the text to the bottom of the red banner and gives me the inverse curve of what I really want. I need the curve arc to match the top of the red banner not the bottom. Help from those that know Inkscape better than me is needed and greatly appreciated.

i think i know what your problem is, but im not to sure without having your file in front of me, but anyhoo...
i think that you are applying your text to the path of the whole banner, and when you do this, it starts from the first node, which it seems is at the bottom of the banner.
here is how i would get around this:
1. Is My "Banner"
2. I dupilcated the banner split the path and removed all the other nodes, so i was left with a curve...
3. I put my text on the path (my curve)
4. i made the curve transparent
5. i lined up the banner and the curved text where i wanted it...

You've read my mind!! Thanks for being patient - I'm still very new to using Inkscape - and posting a quick tutorial on how to do the banner and text effect. I tried it and it worked!!
I tried to post an image to those two free sites for you to see but I had problems with both of them - they didn't allow me to post the .svg file and I didn't readily see an option in Inkscape to convert to a different image format - and after several tries I gave up. I'll keep trying 'cause I want to show this upraised lettering effect I am trying to emulate - I called it inverse-embossed - and I am having to luck in doing so.

If you want to upload an SVG file you'll need to choose service that is prepared to host more than just images. Even though SVG is technically an image, most image hosts only support raster images. You could sign up with box.net or mediamax.com who will host any files you want.
To save an image from Inkscape as a PNG (which an image host will accept) go to File > Export Bitmap.
