I want to find the quickest way with the Pen tool to create a rounded corner with 2 straight sides tangent to them. The result being Straight-Curved-Straight.
See the 3 pink segments connected smoothly:
I can do it at EDIT. I wish to do it when I CREATE a new Bezier curve to speed things up.
Edit method:
1) Draw 3 straight segments
2) Make the intermediate nodes tangent
3) Make segment 1 and 3 straight again.
or also
...
2) Bend the middle segment
3) CTRL-Click the nodes. They snap to tangent. The straight sides stay straight.
I know at Bezier creation with Pen, holding shift while dragging lets you create angles between curve segments. But I want straight segments that are tangent to a curved segment.
Is this possible?

That is not possible as you want it to be.
You cannot draw straight segments with tangent-smooth nodes at their ends.
A close match would be to
click with the cursor at the first straight segment's nodes,
then click to the "middle point" of the curved part and pull the cursor until the shape looks right,
then click on the end point of the curve and to the other end point of the straight segment.
There is no node handle's set at the starting and end nodes of the curve this way, so the shape would be totally messed up if you edit the node handles to be right.
If these are done in spiro-spline mode, the curved part will be circular, but you cannot set the straight parts to be tangents exactly.
That is not possible as you want it to be.

Especially when the results are mixture of straight and bent segments. I was trying to avoid going back to edit round corners that can slow the procedure down. On highly curvy shapes, clicking and dragging seems to work quite well at getting the right shape with much less editing later.

Use rectangle tool - Draw rectangle with rounded corners.
Select Node mode - F2.
Select Two adjacent nodes of opposite corners.
Break path at selected nodes.
Break apart Shift + Ctrl + K.
Select Object Mode - F1
Delete unwanted Part.

Try this: Draw your line with an extra point where you want the round to be. So for an example you have three points connected by straight segments made by simple clicking with the bez pen.
Now delete the center point. If you don't get a curve then your prefs are set the other way and you can ctrl-delete to get the curve. Inkscape attempts to fit a curve to the former path. This usually results in tangents.

Hi, nubee to Inkscape and the forum, but I think I stumbled onto a method here.
Using the pen click once, hen holding CTRL to constrain, draw a horizontal line to the right, and click.
Then using CTRL, move the mouse down to the right at a 45 degree angle. Dont click yet!
Let go of CTRL, and position the cursor directly over the end of the line.
Now click and drag down, then add CTRL to constrain to vertical.
Keep dragging until the handle of the node is at the same height as the horizontal line.
Click, done!

You definitely should check out an Inkscape developer version with Fillet&Chamfer extension:
Dragging a green point from a corner will generate a symmetrical curve with smooth ease-in/out transitions.

I'm sorry for resurrecting an old post. Found, by accident, another trick.
Draw a shape with Bezier tool (with icon - create sequence of straight line segments). The
shape may look like posted by user Polygon.
Select the shape, go to Path > Dynamic Offset. Adjust the Offset Distance by pulling that node
outwards (expand) by few millimeters. Presto, you have rounded corners!

The OP did not state whether the rounded corner should be an ideal circle or an ellipse or if it could also be something else. I think a pretty easy method is the following:
1. Select Bezier Tool (Shift+F6)
2. Mode: BSpline
3. Hold Ctrl-Key all the time, click and drag a horizontal line
4. Click again where you want your rounding to start
5. Continue dragging horizontally until where you want to go vertically, click again
6. Continue dragging vertically until where you want the curvature to end, click again
7. Continue dragging vertically until you want to end your straight part, double click to finish the line
Looks complicated but is rather simple as you can see in the animation.
