(I'm not quite sure of the proper terminology here, so please be patient!)
Basically, I would like one inch in Inkscape to be one physical inch on the screen when at 100%. To do so, I would like to change Inkscape to use 110 DPI, like my monitor. However, Inkscape appears to work at 90 DPI. Is it possible to change this? I couldn't find anything in document properties.
Right now I am working at 125% so that I can see my work at full size (doing some light CAD). I would like to be able to just hit "1" and see what I'm working on full size.

Might be useful if you check Inkscape properties / Interface and there you`ll find Zoom correction factor.

Hhhmm, interesting, would you look at that! All this time I thought the Inkscape units were true. But in fact, an Inkscape inch is not a true inch.
Is an Inkscape pixel the same as a true pixel? I know it's not exactly the same, but I thought it was close to the same size. Often when I make illustrations to show something in a message, when I post the message, the image looks huge. Maybe this is the reason? ......omg....recently there was a member having trouble with their image, and I thought the problem had to do with the sheer size of the image -- 77,000 px!! After some crude calculations, I figured that was wider that the house where my apartment is one of 6. This means the image was really much bigger, lol.

That works fine, thanks! Though I do find it disconcerting to hit "1" and zoom to 125%, I will get over it.
