Hi, I use last version of inkscape.

I have a particular request, and I hope that someone can help me.

I need to change default extensions folder of inkscape for using 2 installation with different plugins, but when I open Update -> Preferences -> Sistem input field is disabled.

You need to set the environment variable for the config directory and for the path where to look for Inkscape differently. See https://inkscape.org/doc/inkscape-man.html
