I had initially imported a rather large image. I already carefully drew some bezier curves on a layer above that image. It just occurred to me to replace the original image with a smaller size of it. So now I have the 2nd image ready to replace the one in the Inkscape document. Is there a function/button/etc to allow me to select the large image in the document, and tell Inkscape to replace it with the smaller one?

Import your smaller image (I assume it has just fewer pixels but the same proportions).
- Move it and let e.g. the lower left corner snap (see snapping controls bar) to the lower left corner of the large image.
- Scale the smaller image by dragging the diagonal scale handles such that the upper right corner snaps to the upper right corner of the large image. This way they will have the same size and your vector drawing should still fit.
- Put the small image to the bottom (z-order).
- Now you can select the large image and simply delete it.
I know that other programs will replace a selected image when pasting from the clipboard (Ctrl+V). But Inkscape does not do this.

When they are both the same size (Copy object with target size, then Edit -> Paste size -> Paste size), you can use the align-and-distribute dialog to swap positions.
Something doesn't work? - Keeping an eye on the status bar can save you a lot of time!
