How do you crop an SVG to a certain size?

You haven't been very specific so this answer may or may not help you--change the document size.

I'm not sure - I need to know how to slice bits off an SVG without resizing it or altering the remaining part of the image in any way. Most image editors have a "crop" button but I have been unable to find this in Inkscape. Is document resizing the solution I'm looking for?

Setting your document size is an answer. Again, you haven't provided any specifics about what you want so it may or may not be the right answer for you. If you don't know how to ask, post some screenshots illustrating what you want to do.

When you create an SVG, anything that extends past the document boundry will not be displayed in any SVG viewers and when you export to bitmap you have the option to export the Page which will also ignore what lies outside the boundry.

I think clipping is what you're looking for.
