When I use the pencil tool to draw a letter, the letter "a" for example, there is a light green line that shows the path I'm taking to create the letter. Only after I'm done creating the letter does the actual stroke color and stroke width I selected show up. I'm developing a concept to show young kids how to make letters and I want them to see that actual strokes that make the letter. With the green line they miss how the letter is created. Is there a way for inkscape to show the stroke color and width for the letter as I'm drawing it?

no, this is how Inkscape works currently, it's all about paths. You could look up if there's a feature request for it, though, at https://bugs.launchpad.net/inkscape-web, and make one, if you don't find any. For some paths, for example if you are using smoothing or a path effect, the result can only be calculated when the path is finished.
You could use the calligraphy tool (fountain pen icon), though, but it creates a filled area instead of a path. Or the other tools - rectangles, ellipses, stars - show the end result already while drawing.
