Gradient fills - very confused

Yes, I admit, I'm rubbish at SVG editing, but nevertheless I do want to improve. I am trying to master gradient fills in Inkscape, but do not understand the menus. Much as I try, I can only get a gradient fill to go from one colour to transparent and colourless. Also, the edit stops thing is very confusing - how does it work, and how do I remove the default endstop of 100% clear and colourless? How, for instance, could I draw a circle whose fill went from red to green?
