Hi
I have a vector graphics image (SVG format) which I need to prepare for printing on balloons. The print is only in one colour and the company accepts EPS files for the process.
How do I make the file correctly? I would like the shop logo to be recognizable (printed as dots I guess).
Could somebody point me in the correct direction?
What is the name of the process I'm looking for?

Usually it's as simple as Menu: File>Save-a-copy, and select .eps as the filetype.

I'm not clear if you're asking how to draw the image, or asking how to save it in the correct format.
If there is an existing vector image of the logo, you just need to Save As. I'm not sure why td is suggesting Save a Copy, but I'm also not very familiar with EPS format.
If there is no existing vector image, but you have a raster ("bitmap") image, then you can use Path menu > Trace Bitmap, to automatically trace it. http://tavmjong.free.fr/INKSCAPE/MANUAL/html/Trace.html
However, it's possible that the raster image isn't suitable for automatic tracing, for one reason or another. If that's the case, you'll need to draw it "by hand". For that, first do File menu > Import, to bring the raster image into Inkscape. Then using either Pencil/Freehand tool or Pen/Bezier tool, trace the image, right on top of the raster. Save-a-copy preserves the SVG working copy with the construction elements like layers, guides, clip paths. etc... provided one saves the svg.
Save early, save often. Computers crash, customers change their minds, files get lost, different printshops may ask for different formats.
