I have installed this plugin to get a 960 grid system. As you can know maybe, after installing the plugin you can choose File > New > 960 grid 12 col OR 960 grid 16 col.

After choosing one, do you think I can switch to the other without creating a new document?

I'm not familiar with that...whoa!! Well, I was about to say yes-why-not, but it's not at all what I thought it was. By the screenshots and info on the page you linked, it looks like you could. But I don't really know. I wonder how difficult it would be to make up a very simple page, and just try it?

Or, I notice at the bottom of that page, is a space for comments. Maybe you could reach someone that way, if you don't get a better answer here?
