Wow, that does look like a nice tutorial! Too bad it's not in English. It looks like it's teaching about paths and how to edit them. Most tutorials seem to touch on paths and node editing along to way to drawing some larger object. But this video seems to focus on paths.
I don't know any video tutorials like it. But I wrote a kind of introduction to paths, in a text tutorial:

, together with the Node tool
(they're separate sections). But warning, it's quite dry reading, lol.
Help menu > Tutorials > Advanced might be a better introduction to paths. Much shorter than mine, plus it's an Inkscape doc, so you can practice on the illustrations! (Skip Pasting Techniques, if you're in a hurry.) And I think this is the tutorial in the manual which first teaches about paths, and might be helpful:
